I found this recipe over on Jessica‘s blog last week and had to give it a try. I changed it up a bit but BOY was it good! This isn’t the first time I’ve made something off of her site. She always posts such great recipes and I wish I could eat them through the screen.
Corn & Cheese Quinoa
Serves 2 – 4
1/2 dry quinoa
1 cup chopped parsley
1/2 small onion, chopped
1 lime, juiced
1 garlic clove, grated
1/2 cup frozen corn (or corn on the cob)
1/4 cup Authentic Mexican Blend cheese
Salt & pepper to taste
Preheat the oven to 400F. Add the corn to a baking sheet and cook for 15 minutes, until it starts to caramelize. Cook the quinoa in stock, or water. While it’s cooking add the remaining ingredients to a medium bowl. When the corn is ready toss it in there, too. Finally, add the quinoa nice and hot. Its going to melt the cheese and warm everything through. Stir, taste, adjust seasoning and your done!



Totally having this with dinner tonight! I have quinoa to use up!
